Today we pulled our fruit from Gevrey-Chambertin 1er Cru ‘Les Corbeaux’ and Morey Saint Denis 1er Cru ‘Monts Luisants’ rouge! These are both new sources for Maison Ilan and we are very excited about them. We started out with Les Corbeaux in Gevrey-Chambertin and were happily surprised to learn that we would be pulling our grapes from the top portion of the vineyard since this would make it easier for the vineyard owner to perform ahead of his own grapes.
The fruit here has a nice amount of ripeness with balanced acidity. We are looking at low 13% specific gravity with a ph of 3.3 for Les Corbeaux. The tannins here seem to be the most pronounced of all of the sites. We are really excited to see the results down the line.
