I will make sure to add to this as the punchdowns are performed. Though I can’t imagine more than three punchdowns in total for each wine. I am trying to do one punch down at around 21*-27*c as the temps are ascending and one more punch down in the same range, if not colder, when descending. The third would be done right when the must is dry.
All punchdowns are performed by simply jumping into the shower, then into the tank, to pigeage a pied (or punching down using feet). Between tanks, I take another hot shower to limit the amount of yeast crossover between tanks. This was thought about since I thought it would be better and more gentle on the wines (not breaking possible stems or seeds). Once we confirmed the size of our tanks, we knew that there would be no other way possible anyhow. So no guilt in doing something that is interesting for us (with possible benefits).
